I just spent a great weekend with my Mom and Nanny...and I miss them already! I had a great time showing them around campus, eating at some of my favorite Tallahassee restaurants, seeing Country Strong, and introducing them to my friends. I hope they come back soon :)
Just wanted to share this recipe because it is SO easy and SO delicious. I didn't come up with it and I don't really remember where I found it, but here it is:
2 cans crescent rolls
3 chicken breasts (boil, then shred)
1 (10-oz.) can cream of chicken soup
1/2 cup milk
1 stick butter
2 cups shredded cheddar cheese (divided)
Separate crescent rolls into 16 triangles. Spoon chicken onto each triangle. Roll up and press to seal edges. Place rolls in a 9" by 13" baking dish. Combine soup, milk, butter, and 1 cup of cheese and heat over low heat. Stir until cheese is melted. Pour sauce over rolls. Sprinkle remaining cheese on top. Bake at 350 degrees for 30 minutes or until rolls are browned.
Warning: this is not low-fat, low-carb, or low-cal... :)

Chalkboard wall and Rainbow cupcakes!
Hello hello!
I decided, along with two of my roommates, to renew the lease of the apartment for next year! I really love living here and I love my roommates. I blindly went into this situation, but I could not have planned it better if I tried. We are hoping that our fourth roommate will choose to live here again, but even if she doesn't, I know we will all still be close friends.
One of the benefits of living here for another year is that we can PAINT! We are allowed to paint, as long as we paint it back to normal when we move out. Now that we know we won't have to paint it back for at least another year and a half we decided to paint...a CHALKBOARD wall! Sara came up with the idea and we all loved it.

Time...
You will never "find" time for anything. If you want time, you must make it. - a wise friend
I constantly find myself wishing for more time...more time to cook, more time to make fun arts and crafts, more time to actually update this blog, more time to read, more time to exercise, etc. When in reality, I have all the time I could ever ask for. I manage it so poorly that hours, days, and sometimes weeks go by without me feeling satisfied in my use of time. It's not like I am bombarded my homework and studying, because I can assure you, I am definitely not. And it's not like I spend too much of my day exercising or being healthy, because I am definitely not doing that either. I've come to realize that if I don't have very specific intentions for my day, I will waste time in nonproductive, and sometimes selfish ways. I need to constantly remind myself that every second that I am alive and well is a gift. Time is possibly the only thing that I will never, ever, in all of eternity be able to get back. I want to challenge myself to use the abundance of free time that I have as a college student in ways that will be pleasing to myself and those in my influence, and most importantly, to God, who has blessed me with opportunities that I could have never dreamed for myself.
